Minecraft and My Guys

This week, I made a special lunch for W
and last night, my dad and brother drove over to visit!

While the men had "video game quality time",

I made rice crispy treats, creme brulee and this recipe (for breakfast the next day).

1 box yellow cake mix
3/4 cup vegetable oil
4 eggs
1 cup sour cream
2 tsp cinnamon
1 cup brown sugar, packed
4-6 TB milk
2 cups powder sugar
1 tsp vanilla extract

Preheat your oven to 350 degrees, spray a 9x13 with cooking spray.
In a medium bowl, stir the first four ingredients together until just combined.
In a separate bowl, mix together brown sugar and cinnamon and set aside.
Spread half of the cake batter into the 9x13 and spread evenly.
Cover the entire layer with all of the brown sugar/cinnamon mixture.
Pour the rest of the cake batter on top, spread until even.
Bake 35-45 minutes until tooth pick inserted comes out clean.
While the cake is baking mix the powder sugar, milk and vanilla to make a thick, but pourable, glaze.
Pour glaze onto warm cake and spread evenly. After the glaze sets, serve warm or let cool to warm temperature and serve.  (Slices can be reheated in the microwave for 8-10 seconds.)

We went out for a steak dinner,
celebrated Nathan's birthday a little early (Happy 26th, Pud!)
and stayed up talking until late.

The next morning, I served the honey bun cake and these,
Bacon and Egg Cups
12 slices bacon
8 eggs
1/2 cup shredded cheddar cheese
pinch of salt
1/4 tsp black pepper
Preheat oven to 350 degrees. Whip the eggs, salt, pepper and cheese with a fork.
Spray non stick spray in 12 muffin tins. Wrap each piece of bacon inside the sides of each muffin cup.
Fill each bacon lined muffin cup 3/4 of the way with the egg mixture. (I used around 3 TB of mixture per cup.)

Bake for 30-35 minutes, until the egg cups are golden brown and don’t jiggle.
Serve immediately. (I used a spoon to remove them from the muffin tin.)

(Next time I make this, I will pre-cook the bacon a little bit so it is crispier.)
then put them to work moving furniture! (Just one desk!) They left shortly after,  with some leftovers for mom. Love spending time with my favorite guys!
