I'm trying to get used to getting up early so I'll be ready when W has to get on the bus at 6am, so I was up, had gotten my iced coffee (and free grilled chicken egg sandwich) and was ready for the day!
Some people were not so perky, ha ha!
The boys begged to do chores for money (to buy the new Lego Dimensions Harry Potter and Ghostbusters sets that are coming out),reading club at school! (W's very last activity at his old school!)

Then we played a game,
ate a new recipe for dinner,
Beefy Zucchini Bake
eggs, large - 2
zucchini, with skin, shredded - 4 cups
parmesan cheese, grated or shredded - 2/3 cup
salt - 1 tsp
ground beef , pork, sausage (no casings), or turkey - 1 1/2 pounds
onion, chopped - 3/4 cup
mushrooms, fresh, sliced - 2 cups
peppers, green, yellow or red, chopped - 1/2 cup
cheese, shredded - 3 cups (more or less to taste)
tomato sauce - 1 jar (26 oz)
Prepare a 13x9 pan lightly coated with cooking spray. Set aside. Place grated zucchini in a strainer, sprinkle with salt and toss. Let stand for 15 minutes. Add eggs, parmesan cheese and half of the shredded cheeses to a medium sized mixing bowl. Set aside. Preheat your oven to 400 degrees. Squeeze out moisture from zucchini with paper towel. Place in medium sized mixing bowl with eggs and cheeses. Stir to combine. After I squeeze out zucchini I just use my hands to mix zucchini mixture together. Press, as evenly as possible, into your prepared pan. Bake, uncovered, for 25 minutes. In the meantime cook ground meat until no longer pink. Drain if necessary. Sauté onion, peppers and mushrooms over medium heat until tender. Drain. Add tomato sauce, meat and sautéed vegetables together and stir until combined. Dump on top of zucchini layer. Sprinkle with remaining cheese. Bake 20 minutes longer, until heated through. Let rest for 10 minutes before serving. Enjoy!
That night, E took the boys out to get their new school shoes! W went from a size 2 to a 3.5, and picked his current favorite color.
B now wears a 3 (was a 1!) and only wanted Real Tree shoes, so we had to order them online!
