Low Carb Cheeseburger Soup

The boys each had two helpings of this! (Of course, they loaded them down with toppings-pickles, extra cheese, diced tomatoes and French fried onions!)

Low Carb Crockpot Cheeseburger Soup

  • 1 tablespoon olive or avocado oil
  • 4 cloves garlic
  • 1 small onion chopped
  • 1.5 pound lean ground beef
  • 2 cups diced celery about 8.3 oz (I only used one stalk.)
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 32 ounces beef broth
  • 2 cups cheddar cheese shredded (shred it yourself, it will melt SOOOO much better!)
  • 1 1/2 cups almond milk (I used 1 cup milk, 1/2 cup almond milk)
  • 1/4 cup sour cream
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon pepper or to taste
  • salt and pepper to taste
  • 1 pound cauliflower florets fresh or frozen (I used small head of fresh.)
  1. Cook garlic and onion in skillet with hot oil until fragrant.
  2. Add ground beef and cook until browned. Remove from heat and drain oil (if needed)..
  3. Transfer cooked beef into a 4 or 6 quart crock pot. Add remaining ingredients
  4. Stir to combine ingredients. Cook on low 4-6 hours.
